When I foil at 165, I noticed that my bark gets mushy whn I take it off the drum smoker at 195. I don't really see bark, more of a mush. I use mustard and the basic spices to achieve a thicker bark.

Well, I decided to smoke a tri-tip and used just a few hot coals instead of a full reactor. My temps were very stable and controllable. I guess moderation is the key.

I just found out that I can't start a nuclear reaction to get a nice hot basket. My next cook will be with the slow and patient start. I did not mean to cause any confusion about temp stability in my other post.

That is an excellent thought, but I can see myself cutting off too much and having that drop straight to the bottom. I will keep this idea open for now.

Maybe I can pick your brains on this one too. While the pictures may show a perfect fit, please realize that both the top and bottom lids are balanced on the rim. I have no doubt that a strong wind or accidental bump will knock the lids loose. I am thnking about either bending the lids in to fit...
I had my choice of the floor model or one in the box. I just took the floor model. The metal is really chincy, but should work as a cover for my UDS. The cover is a little small so right now it balances on top. I intend to beat the out side edge of the metal cover with a rubber mallet to flatten...
Is that 225 in the center or on the side? If you measure center, is that done with a bare probe, or is it stuck in a tater? Just curious as I have the same question as the OP
