This is the process that most of the old butchers around Lafayette La. used when I was a kid. They would smoke the meats during the day and allow a break during the cold nights. The smoke flavor fully penetrates the meat and turns it red, much darker than the nitrate pink. Darn good stuff and...
The only authentic Cajun BBQ sauce that I know of is Jack Miller and Pig Stand brand. Both are heavy onion, spices, oil and a bit of tomato. No recipes with me now, but Google should find something.
Nice job saving those old pots. Take good care of them and give them to the grand kids. I have 2 Very old pots from my Grand Mother, she passed some 30+ years back. I use them frequently.
I have switched over to flax seed oil and I am very impressed with the finish, I won't use anything...
You could try asking the LSU horticultural / agriculture office. They used to have a citrus research facility just north of Port Sulphur. Someone at one of those places should be able to help.
I do miss the satsumas. We get the little clementines, but they aren't quite the same.
Good luck...
If your sensitive to salt I would leave out the same amount of salt as the amount of cure you add. But as Dave says it is a very small amount and won't be noticed by most.

Slap Ya Mamma is a Cajun mix from Ville Platte that I like, Amazon has it and the others if not available locally. For some reason I have Tony's, Zatarain's and Slap Ya Mamma's seasoning right next to the stove.
Good looking beans Gary, I am going to try them next weekend. :)
Salt, Red...
Hi all,
Has anyone tried the Cabela's brand of wood smoking pellets? It looks like they are replacing the Traeger brand with their own in my local store. I will be using them in my A-MAZE-N trays & tube.
My primary question would be on performance in an A-Maze-N tray or tube and secondly...
As the others have said it's mostly down to air flow/draft and good dry pellets. When cold smoking i put an old PC fan on the top vent to pull air up and out the cabinet.
I saw them a couple of weeks back in Phoenix. They had 3 grills with them at that time. The smaller one with the shelf underneath is a Costco exclusive (that's what the salesman said) seemed to be very sturdy and the best built of the ones on display. I think it was $700, not sure. The...
More than likely the plants sold locally will do well for you. Jalapenos, Tabasco and cayenne are a few that I have grown in Dallas. This year I am going to try the Fresno, a blurb I read said it is well suite to hot dry environments.
As to the Japanese variety, the only one I know of would...
