Just another warning about equipment thermometers being inaccurate.
I'm smoking two racks of ribs and it's taking six hours. Not too unusual except that at 275° F, I expected 3-4 hours. These are my first ribs on my new smoker so, you know, what do I know, right?

Yeah. And it was difficult to get. Nobody seemed to have it or could get it. I hit a Lowes just right. They had a couple but the guy said they'd be gone by the next day.
Darn. And I just bought the mighty, mighty Bosch 800 as a bribe so my wife would let me buy a smoker. Ugh. New dishes, TOO?!?

I have the Jillmo covers and air locks. They're OK but the cap on the air lock is tough to snap on and off. They also have an inverted "thimble" covering the exhaust tube that doesn't seem trustworthy...
Hmph. I can accept that. Neat!
I came here for jerky recipes and learned about brining for safety's sake during a long dehydration.
