Tonight us my first shot at Chicken in our MES30. I put a little salt, pepper, red pepper flakes and garlic on boneless/skinless breasts, then wrapped with some bacon I wanted to use up. I put it in the smoker at 225... let's see what happens.
Your sticks look great. I wish we would have made a larger batch yesterday because they are't going to last. Guess I'll make more next weekend.
Any issues with the 19mm casings blowing out? We used 22mm and I'd like to make thinner sticks.
These turned out great! Smokey but not bitter and over powering. Cooked but not to the point where the fat liquefied and drained out. Good texture and favor.
