    Another go at it... the last ones were so good that they are gone in a week We just mixed and stuffed 2.5lbs of Hi Mountain Original Snackin' Sticks with cheese and another 2.5 with cheese and jalapeños.  We're going to try Kraft Crumbles before we try high temp cheese.  I read some postes...

    Ya, I know... if your lookin', you're not cookin' but I opened it it up to put a little glaze on top. Looking good so far. About 10deg to go.

    Ya, if its too tough, cook it then peal it off and toss on the grill for a bit to get some char on it.

    Tonight us my first shot at Chicken in our MES30. I put a little salt, pepper, red pepper flakes and garlic on boneless/skinless breasts, then wrapped with some bacon I wanted to use up. I put it in the smoker at 225... let's see what happens.

    Your sticks look great. I wish we would have made a larger batch yesterday because they are't going to last. Guess I'll make more next weekend. Any issues with the 19mm casings blowing out? We used 22mm and I'd like to make thinner sticks.

    These turned out great! Smokey but not bitter and over powering. Cooked but not to the point where the fat liquefied and drained out. Good texture and favor. Vacu-sealing them was probably a waste since they won't last long before they are eaten up, but its another new toy that needed to...
