Late update...but it turned out good regardless. My vote still goes to my WSM. But I think with a few more smokes and take aways, this Traeger will be just as good.
Here is what I learned from this session:
-Leave more fat on
-get the IT to 205 (personal preference)

Hey team, first pork shoulder (3lbs) in my new Traeger pro 22. Im a fan of hickory, therefore I'm using 100% hickory pellet.

Rub- Traeger Pork and poultry rub

- 6:15am starting smoking. I left it on the smoke setting for the first 2 hours...
You know I used to be a fan of the 3-2-1. But now I just put a dry rub on and put it in the smoker, and just let it do its thing. I typically keep the temp around 250 and check back in 3 hours.

The smoke should go down today, this is my biggest concern on the whole process. But again this is just a trial and error. Wish me luck.

I'm all about the bend test as well, and seem to have built a list of fans that's love it. The bend test works everytime, I may have to give the IT a try and see if there's a difference in taste...maybe illl get more fans 128563

I'm no expert, but I'm going to rinse the belly, cut off a slice, cook it and if it's to salty I will then soak it in water to remove some of the saltiness. If it's not to salty I'll just dry it overnight in the frig before I smoke it. I'm going to make a PT 2 video that shows the details.

Sorry all...had to leave on a last min business trip so I couldn't responded to a few. But I will update a timeline when I return. As for the oven, it only sat in there for 30-45 mins top still wrapped in foil.
