    Chunking them up in 1 inch cubes or so. I decided to glaze them with Jeffs sauce, honey and brown sugar. Put them back on the smoker in foil pan uncover for about 2 hours or so. Adding more smoke not sure how much it will get being in a pan, we will see when they are done. You will have to wait...

    Took about 5 hours to hit 190 running around 230 or so.

    Well I bought just over an 11 pound pork belly from costco. Cut it in four pieces, 2 chunks im saving to try my hand at bacon, the other two were off size one about 3 1/2" thick the other was maybe an inch or so. I trimmed some fat, off light rub of mustard, heavy coating of Mccormick applewood rub.

    Whoops...Sorry didn't realize that the product inspiring me to build this is a moderator on this site. Im just kind of a do it yourself kind of guy, specially when the material is free and I have access to the proper equipment. Hopefully there is no hard feeling about it.

    Kind of hard to see the lay out. You will see it come together. Should be a fun TIG welding project.
