Took your advice from another thread. My last little container of belly ends I diced up small with some green pepper, onion and garlic then made scrambled eggs with them for break tomorrow.
Nice bark, haven't tried smoking these yet but have been dying to might be my next smoke. I never see any worth buying at the stores around here, might have to try a local butcher.
Besides your basic breakfast meats I've never thought of using left overs off the smoker for omelets, sounds good though. Maybe my next brisket I will try it!
Picked up a 20 pound bag of lumber jack pellets competition blend for 8.99 at rural king and did a test run. Last time i checked it it was about 11 hours in and i had a couple inches worth left of pellets.
Here is a leg shot. I sheared
1 1/2"x1 1/2" pieces laid out center both ways and used a grinder with a cut off wheel and cut straight in on one side to center. Slid them inside each other tig welded them together. Now any way you turn them on grates they will still sit fine.
