That's the red pepper powder I like the best so far. Shin Sun mi coarse red pepper powder from Amazon. It gave it a flavor profile very close to the Kim chi I have had overseas and from a little local Korean restaurant.
I had 2 lbs of thawed deer I needed to use so this is what I did
2 lbs ground deer
Montreal steak seasoning
Colby Jack for stuffing
Oak pellets in amnps/mes 30
275F 1H 20min
It gave it some extra Smokey sweet omg tasty bark, no basting though just score, oil, rub smoke. I do use water in the the water pan is all the extra humidity I added. The rub is my all purpose rub for me works well on everything.
