First try at ribs! Enjoy the Q view!

Great-looking ribs, and you just gave me a great idea for my beans:  why not set aside some of my homemade rub (your basic brown sugar/white sugar/chili powder/paprika/garlic/etc that many use) to spice up my beans, instead of JUST brown sugar that I normally put in there? I'm thinking some of...

1st ever, ever, ever Smoke (w/ Q-View), Pork Steaks

Nicely done, sir!  I always add a couple o' rubbed pork steaks in with my baby backs, to cut up and put in my bbq beans.  As I call them, "auxiliary pork!"  Pigeye

What type of Paprika and Chili Powder do you use in your rub?

Thanks, guys!  I'm going to go with their standard "Mild Chili Powder," in a 75/25 mix with ancho chili powder (might add a smidge of the guajillo too), and then the sweet Hungarian paprika.  Am also going to try going with turbinado sugar this time, instead of my 50/50 mix of brown sugar and...

What type of Paprika and Chili Powder do you use in your rub?

P.S. I read somewhere on this site that if you use turbinado sugar, instead of regular white granulated sugar and/or brown sugar, it has a better result when 3-2-1'ing ribs (chars less?).  Is that true?  Wouldn't I be losing the molasses-y goodness from the brown sugar?

What type of Paprika and Chili Powder do you use in your rub?

Having pretty much gotten the whole "3-2-1" thing down now (I do "2.5-2-.5" for my baby backs), I'd like to take my ribs to the next level by using fresher spices in my homemade rub. Someone referred me to SavorySpiceShop.com, which seems to have a great selection, but that's my problem.  There...

Considering a mod for the Brinkman Vertical Smoker

Switching to the wire mesh veggie basket instead of the supplied charcoal tray really did the trick for me.  Before that, my coals would always get "ashed out" too, despite drilling lots and lots -- and bigger and BIGGER -- holes in the charcoal pan.  Now there's plenty of air that gets to the...

    Wings Not Crispy Enough

Never tried deep-frying after smoking, but I've read about it.  And I DID run out of propane, juuuuust as the ribs were coming off, so if I want to crisp these up tonite for leftovers, I'm looking at either the broiler or the Fry Daddy!

    Wings Not Crispy Enough

Absolutely NAILED my Super Bowl babybacks (3 hours in the smoker @ 225-240, 2 hours foiled in the oven @ 225, 15 minutes to finish 'em up on the grill), but was really disappointed in the WINGS. They LOOKED great, and were throughly cooked, and had a nice, smokey flavor.  The rub (kosher...

    Baby Backs and Yard Bird

Looks awesome!   I swore after working WAY too hard last year's Super Bowl day, that I wasn't going to smoke ribs again THIS Super Bowl, but I think I'm changing my mind!! Pigeye

Tray to catch charcoal ash and protect wood/patio deck?

This one looks like it would work perfectly: It would extend outward enough to catch all the hot ashes/embers, and have some room to spare to maybe set any messy tongs or basting brushes, etc. thanks for pointing me in the right direction! Pigeye

Tray to catch charcoal ash and protect wood/patio deck?

Robert, Thanks -- that would probably work.  I have the cheapie Brinkman square vertical upright smoker, so the footprint isn't very big.  I mainly just want something that would fit underneath the smoker, and extend somewhat in front as well, since I did the vegggie-basket-as-charcoal-pan mod...

Tray to catch charcoal ash and protect wood/patio deck?

Would like to place a large, square (or rectangular) pan underneath my vertical smoker to catch the ash, make cleanup easier, and to protect my wood deck or pool deck when smoking.  I'm thinking that Lowe's or Home Depot should probably carry sort sort of aluminum or stainless steel shop pan or...

The Classic 4th of July Compromise

I've been DYING to smoke some ribs for the 4th, but my daughter reminded me that I've been PROMISING to make her chili for nearly two months, and that during that time I'd made baby backs (my son's request, and mine) TWICE. Then of course, she did what most girls do, and she batted her eyes at...

Baby Back Ribs attempt with new found knowledge

I don't think there's any reason to brine them if you're going to do the 3-2-1 (or any variant, where you're foil-wrapping them -- preferably with some apple juice or such -- in the oven for a period of time in the middle of the cook).  I just do my rub, then let them marinate in that for...
