Welcome Everyone to the new SMF!

Our profile had us listed as being somewhere in Western Europe. It looks so much better now that I went into Edit Options and put it back on Pacific Time. I was wondering why so many people had been posting during the wee hours of the morning. It looked like too many even considering how...

    What's the coldest day

Looks great. What would happen if you put the skinnies above the roast & let the bacon & sausage fats drip over it to add more flavor on the way down. That is only if the skinnies could handle being on the upper rack. Or would that really mess up the cooking process of both the roast & the...

    Beef Summer Sausage

If nothing else works (and if you don't consider it cheating), you might try adding a little natural liquid smoke flavoring to your mix so you have flavor on the inside too. Wrights makes at least 2 Hickory and Mesquite - I use Hickory for my BBQ sauce if we don't have time to smoke something...

    Beef Summer Sausage

What kind of seasoning/cure mix did you use? I don't...

You could try full sheet fiberglass for the walls - but stay away from tile - SS is of course the best. Your wood cutting block sounds great - however, it's much easier to clean a poly cutting block - you can't bleach wood. Check your resturant supply stores to see if you can order one from them...

    Smoking Bacon

The buckboard bacon recipe turned out to be reallllllllly good. We used the pork belly (traditional bacon) instead of the pork butts so we tweeked the recipe a little. We put the rub on and then we used our Food Saver to seal it so we wouldn't get goo everywhere (& also to make the bacon cure...

    Just Learning

Hi everyone - We're the Davidsons and we are just learning how to smoke. We're from Southern Oregon & we get a lot of wild game i.e. deer, elk, bear, cougar, waterfowl, etc. We only have a hand-me-down Lil' Cheif Smoker & are just starting to try to use it. We just raised a pig & want to do...

    Smoking Bacon

I butcher my own pigs and would like to not have to rely on any one else to make bacon. It can't be that hard of a process. I'll take any advice I can get. Thanks.
