I usually cut them about an inch thik at most, Plus I will probably slim down on the meat as close to a pound each as I can. I usually ise closer to two pound when I make mine. lol

I've only seen a picture of it so far, I am picking it up this weekend for $20. I am just trying to get an idea if it would be very much work to pull off all the gas stuff, close up everything except vents, and throw in a charcoal basket, and water pan. Would it be that easy?
I did when I used to work fast food, and pizza, but never with smoking. I have the opposite problem with smoking. I actually hate the fact that I always smell smoked myself, so much it makes me hungry again. If you could just bottle that smell and sell as womens pefume. lol

I am assuming this will be one of those meats that;s cooked by temp and not time. What temp should it reach to be completely done? How long do they take, in general to cook?
