Pulled out the WSM and dropped on a 14lb turkey at 11:30 this morning for dinner at 5 tonight. Last night I slathered the meat under the skin with Tony Chacc and injected with creole butter and a tiny touch of Frank's mixed in. I've done 1/2 dozen turkeys or so at this point, but this one...
handful, couple handfuls so probably 10-15 I'd say. Better to start off with too few than too many. Its always easier to wait a little longer for the smoker to come up to heat than get it too hot right off the bat and have to try to battle it down.
I was always told whatever is in your beer can or water pan in your smoker is there for only a way to apply humidity to the smoker which applies pressure on the meat being smoked as well as plays a role in temperature control not allowing immediate and large temperature swings. I'm with...
I'd say if you're father in law is really as you say he is he would appreciate a fine piece of equipment like a WSM 22.5" or 18.5" in addition to his propane grill. He may be able to do great things with his propane grill alone, but having an actual smoker to smoke meat with and a grill to...
I smoked one of those 8lb breasts today too. It was anywhere from 1-6 degrees here. I cooked at temps between 230-275 and it ended up taking 5hrs. I brought it on myself as i got to IT of 163 and pulled down my windbreak and removed the Reflectix insulation i had around the smoker thinking i...
7hrs? What internal temp in the breast did you cook to? I only ask as i usually smoke a 12-14lb turkey in about 4.5hrs to an internal breast temp of 165. Smoker temp usually between 250-280.
Ultimately the only thing that matter is how it tastes. It looks fantastic! did it taste as great as...
Yep. Between this site and the virtual weber bullet site i can't say i've been the first to do anything to do with smoking. I just knew it was going to be in teens or tens this morning and figured i'd finally pull the trigger on trying this reflectix as an insulator. I'm very, very pleased...
yes, yes it does. I've put the windbreak away already and pulled the reflectix off and am just waiting for it to hit 164 or 165 and pull it off, foil and blanket it and get it in the cooler. Lunch at the inlaws' at 12:30 CST and i still have to shower, shave and dress too.
good question. Another one is how much faith do you have in the temp probe you're using? quick check on its accuracy would be to boil some water and put the probe in and see if it reads 212. If it does then your spot on.
i usually do a 12-14lb turkey this time of year and it takes about 4-4.5hrs. i'm usually hovering 230-275. I don't usually worry too much about holding a tight low temp on birds. Pull it, double wrap it in HD foil and a towel and plop it in a cooler and it'll keep for quite a while. I've...
