2nd Attempt with Chuckie ... Questions

I also injected, marinated, and put on the rub the night before. Mopped the next day with extra beer not used in the marinade. I had a decent amount of juice but I think I will try the pan to catch the drippings.

    Pork Tenderloin - Tonight's Dinner Q -view

Did some pork tenderloin for dinner tonight - did one rubbed with Jeff's rub and one with Galena Street Rub from Penzey's Spices that someone recommended. Smoked with apple wood and spritzed with apple juice/rum. The one on top in the pan is the one with Jeff's rub and for the pork tenderloin I...

    Planning my first overnight smoke...

Last weekend I smoked a 6.5-7 lb butt and started it between 2:30 and 3 am for dinner guests that evening who were coming around 6:30. Well after 14 1/2 hours in the smoker I had to finish it in the over - we pretty much ate on time but even with allowing for about 2 hrs per pound it still...

pork shoulder taking a long time?

I did a 6.5 lb butt last weekend and it was on the smoker for 15 hours. I foiled it at 165 and finished in the oven when the temp hit 170 since we had people coming for dinner. It was in the oven for about an hour where it went from 170 to 205 so it was pretty fast. Pulled real well and was very...

    Newbie on a chuckie

I've only done 2 of these so I am by no means an expert but they did come out really good. Basically I read a bunch of threads on here, asked a bunch of questions, got some really good advice from the many people who are far more knowledgeable than me, and then just sort of improvised with the...

    choosing a paprika

I just picked some of this up the other day too to try - haven't used it yet but I did use their chipotle which I thought was very good. I never heard of this place before until a co-worker told me about it - there's a location right across from my office in NYC - pretty funny that it was right...

    Jeff's rub

That's cool! Though I don't think mine will make it more than a week or two since I didn't make too much. But in the future I can probably get away with making a bigger batch and storing it!

    Jeff's rub

I just bought Jeff's rub and sauce and used the rub over the weekend for my pork butt. It was amazingly good as was the sauce which I used for dipping the chuckie I did at the same time.  I would be curious to know how long the sauce will keep in the refrigerator after it's made?

    Spice Vendor

I just found out about this place today from a co-worker. It turns out they have a store front in Grand Central Station in the marketplace which is a block from where I work in NYC. I ended up buying a few things and the q-view I posted earlier of my chicken salad included chipotle I just bought...
