I've been wanting to get a fatty on the smoker for a while now. I've prepared one tonight to throw on the smoker on Thursday (with the turkey). (I'm not sure how well it will store completely assembled, but we'll see!) SWMBO claimed the kitchen all day tomorrow so I didn't have much choice!

I see. Sorry, I completely missed the fact that the smoke could still flow under the expanded metal grate. (It's quite obvious now that I think about it!) So, it isn't as dampened (?) as much as I originally thought.

Will that vent allow enough smoke to enter the smoking chamber? (Just a question, not a criticism. I've never built OR modded a smoker before!)
After some trial and error you may decide the baffle needs some additional holes in it. But, as I'm sure you know it is much easier to cut new ones...
Well, if it is like the Smoke 'N Pit Pro, then I would like it. I'm using a SNPP and have been really happy with it. I am planning to do a few mods to it though now that I've found this site!
I plan to bring down the stack and add a tuning plate on my old SNPP.
I'm definitely looking forward to trying the finishing sauce on my next smoke. It sounds very similar to something they served at a local BBQ joint that has since closed. I've missed it ever since!

I think you'll be really please with this forum. I'm a newb here, but have REALLY enjoyed the wealth of knowledge available.
I started out with a smoker similar to yours, and while far from the "ideal" smoker, you can still get some GREAT results with them. So don't get discouraged!

How funny. I smoked my first Pork Loin yesterday as well. I think that it turned out very well. I was really worried about drying it out, but it turned out really well. I have to say though that yours looks even more moist!

You know that hadn't occurred to me, but it is a fact! (So far anyway!) I got the SNPP free from a store that was trashing it (brand new). It didn't have the hardware to attach the firebox, two legs were slightly bent at the top, and the wood for the work surface...
