Double Smoked Ham, The Star of Canadian Thanksgiving

Thanks for sharing your recipe/technique, I may try some tweaks on mine the next time I do a double smoke. This past summer I offered to cook for my brother in laws wedding, 150 people and no I had never tried to cook for that large of a group. I had stuffed chicken breasts and over 25 pounds...

    Snack Sticks 101

My thought, to get something more like a "slim Jim" I would add some fatty pork. A buddy and I years ago did a similar recipe with wild game birds, venison and ground fatty pork. We had to go 50/50 mix or we had that "dry gritty"texture. We did use his smoker to finish.

    New to Smoking

Howdy David,      I am a relative newbie also, but have learned a bunch of ways to spend a "smoky weekend".  Best of luck in finding a good stick burner, use a propane one myself, but trying to get a mobile stick burner....my trouble out here on the prairie is there just isn't much wood. lol

Butchering some chickens and found somthing odd

Hi, I have raised quite a bit of poultry and shot a lot of "wormy" ducks. Could be lice, very common and likely with description of birds. If the conditions were deplorable I do think of threadworms, but would bet on lice which shouldn't affect the meat, just makes you think you need to scratch.

    Brisket Kansas City style

A few years ago I stumbled across a video, I think it may have been on "diners and dives", showing a smokehouse in I believe Kansas City. They did a sixteen hour smoked brisket, no trimming until point and flat separated and lots of sweet rub. I did it for a couple competitions years back and...
