    Made a restaurant depot trip today. All night brisket!

    So after smoking it it became obvious that it did in fact have the point as well, just a small one. So I cubed it and made burnt ends. Heres the finished product. Sliced brisket and burnt ends! Forgot to take a picture of the whole piece before I cut it up.

    Went to restaurant depot today and picked up a trio of flat briskets for 2.15/lb. They are big at approximately 9.5lbs each. Decided to do one tonight. Rubbed it and put it in the mes a few hours ago. Here's the before shot:

    Best bet for TBS with no babysitting or loading chips is an AMNS. Perfect set it and forget it solution. I do overnight smokes all the time with no worries.

    I buy 99% of my meat at Costco. They have amazing tri tips, butts, and steaks. Oh and super cheap chicken.

    Ask for them to leave one unsliced the next day. They told me they would leave it unsliced for me.

    I thought I'd throw this out there for anyone looking for a great deal that has a Safeway store near them. I picked up an 8lb package half sliced, half whole. I've got the roast in the smoker now with Jeff's rub along with some chuckies with Cherry wood. I'll post a qview later.

    My first batch of sausage and some questions

    There will always be some left. Some people use a few pieces of bread to get the last out. If not you can manually clear the tube and cook that portion fresh in a patty.
