I can think of two things. 1. Keeping from staining my shirts no matter how careful I am. All my shirts have stains. It's inevitable.

I just got a new res med 10. Was using the 9. The 10 uses a lot of water. I have to fill it every night if I keep it around 7 setting. My res9 only needed water every two weeks at 7 and the res 9 did a better job "not drying me out"

IMO its the casings. Home packs packed in salt wont soften up like a hank packed in a salt brine. Get ones that come in a salt brine or solution. You'll have a much better experience. I had the same experiences as you did with salt packed casings.
You shouldnt have any problems with storing the emulsified meat in the fridge. Just keep it covered as you would ground meat. Yes the meat will warm up to about 50-55 degrees but it emulsifies so fast you can get it right back into the fridge to cool. Its not like a slow grinding process

IMO if you changed the MAP and flow sensor and it fixed the problem I would test them components to make sure they are working properly before trying to fix the issue by guess swappping parts (AKA Swapatronics). Stay away from aftermarket parts if possible. I use NAPA if I cant get OEM and even...
