    Smoked Lasagna

Very good. The top layer picked up the smoky flavor, and of course the "Italian Blend" of shredded cheese on top picked up the best of it all. Other than being a bit dry it turned out great. Oh and BTW we also warmed up a loaf of Rosemary Garlic Italian bread in foil (sliced with butter). It...

    Smoked Lasagna

Well, thought we'd try something new this weekend. So we made up a big pan of Lasagna and put it in there for 2.5 hours at between 250-300. It came out very good, but next time I would have a thinner sauce, as this one got a little bit drier that we liked. Upside to that is it sliced and came...

    Using Wood

I have New Braunfels Hondo that I use lump in all the time. Well it appears our WalMart has stopped stocking all there BBQ supplies for the season (no Royal Oak lump!), and all the grills/smokers are on sale. I've been having problems with the lump I've been buying lately anyway. Lots of tiny...

    Remote thermometers

That's the one I use, works great. And if you have two bases on and one remote it switches back and forth between the temps of the two bases. It is up to you to figure out which temp is which though. :)

    Couple Brisket Questions

Last time I had to reheat a brisket I sliced it cold, put it in a glass casserole dish (with lid), all the drippins I saved, and reheated in the oven. With all the drippins in there and the lid on, it stayed moist and tender.

    Char-griller Smokin' Pro grease catcher?

I dunno... I inherited a bunch of old mason jars from my Mom, and usually pick them up at garage sales when I see them. They are great for the habanero salsa I make :)

    Char-griller Smokin' Pro grease catcher?

A small mouth pint mason jar fits just right and you can put it in the dishwasher after you empty it.

    Dry Rub Troubles

Definitely rub the night before, and then I apply again before it goes in the smoker. After an hour in the smoker it gets spritzed with Apple juice every hour, and about a cup of Apple juice poured in when it gets foiled. They fall off the bone, have a nice bark, and are very yummy. :)

    Dry Rub Troubles

I found this rub recipe http://bbq.about.com/od/rubrecipes/r/bl80530b.htm It's pretty much my favorite for beef and pork. Double the cayenne tho (makes it really spicy). no lack of flavor here... :) Watch you eyes rub1/2 cup paprika1/4 cup black pepper1/4 cup sugar3 tablespoons salt3...

Too much time on the forum?

As long as I produce quality Q and show my wife all the QView she doesn't say a word. At work it has almost become part of my job requirements to be on here at least once a day since I smoked a brisket for an "office party" a couple weeks ago. Heck, I even got half a day off the day before to...

I'm in... Sounds like fun. I'm all for a poll... Polls are good because a lot of times they include a bit of critique by nature.

    Build your own?

Mmmmm 20 briskets... :) Time to buy a deep freeze too. Or maybe build a small closet sized "walk in" in the same room as the smoker?

    Build your own?

Yeah, this whole idea isn't very practical. But interesting to think about. I grew up in a house that my Grandpa built. One of the really neat things about the kitchen was that in had a full sized built in stainless grill that ran off natural gas. It had a hood over it that you used when you...

    Build your own?

You could use a hood and squirrel cage fan. Only turn it on when you are going to open the smoker. But I also like your idea of automatic misters. I like to spritz with apple juice, so you just set up a timer. Also, I wouldn't use chips for a computer controlled smoke, I would use pellets...

    Build your own?

Well you can rule out the automotive intercoolers. They would get gummed up way too fast, and then would be useless for anything else. I would use loops of dryer duct possibly with a fan. Then if they get too crappy your out a few dollars. No matter now you go about venting it, you are still...
