    Buckboard Bacon......

For this is I used the coppa muscle. The rest of the butt is saved for Italian sausage next week. I sure like the dry rub brine better than the wet brine. Lots more flavor. Makes a pretty good BLT.

    Buckboard Bacon......

I think this may taste as good as it looks. In an effort to get more flavor I switched to a dry rub cure and extended it to a 14 days. Started with a pre heated and stable 150 degree smoker at 10:30 this AM......Finished up at 6 and 6:30 PM with interior temps of 146-147 degrees. BLT for...

    Cast iron brands

This may sound like sacrilege but for everyday cooking I've come to prefer the "Light Weight" cast iron pans. They're similarly non stick and spread heat very well. The brand I own is IKO liFe. I have conventional cast iron pans and dutch ovens and prefer them for some uses......but for...

Need advise...Are my Bacon wet cure calculations accurate and safe?

Thanks for the response....Appears you took .025% of water and meat. My number was .025% of water, meat, salt and sugar. That was part of my confusion. I have seen advocates of both calculations as being accurate. So you're saying .025% of just the meat and water.

    Weaver or Isosceles ?

Weaver. For me... Naturally balanced/stable. Faster on target/more accurate. Stable/accurate follow ups. Easier to be aware of my surroundings. Easier mobility. Right eye corrected for the front sight. Left eye corrected for distance/target. and Chilerelleno is correct...whatever it takes.
