If you have a lot of wood smoking along real well and you give it more oxygen by say opening the door, or pulling out the chip loader part way, I could see how that could cause an immediate "poof" of all the wood lighting into flames all at the same time.

I wash the birds only to be sure there's no poop left on them from processing. I don't generally rinse anything else unless I see bone bits which is rare.
And I suppose I do rinse fish too now that I think of it...
I totally agree. If you pick the right one with a "normal" fat cap, and you might only find 1 or 2 in the whole pile that fits that criteria where I live, then they smoke up just fine and you don't lose half or more to fat.
That's a pretty cool idea especially with the popcorn. Actually, I can already come up with several things that I'm sure it would taste great on from steaks, fish, mushrooms and other vegetables to chicken wings.

I have GOT to try this one! I love the beer cheese soup from Schlotski's but they don't make it anymore with beer and that changed it. Yours looks great.

Turkey bacon- yep, doesn't work for stuff like this. Either none, or the thin cheap kind works best I've tried.
But, I had some bacon my mom cooked went I went up there for Christmas and it was low fat low salt no cure...
It looks like you can simplify this even a little bit more even by just doubling the thickness and calling that the first number of days....
Example:
Belly thickest part----3"
Double that and you get 6, so that would be your 6 days plus 2. Seemed to work on all the measurements I tried...
