If I wrap the outside with copper tubing will that work?
Will there be an issue of creating steam if it is a closed system?

I use a cup of salt, a cup of sugar (brown), and a half of a container of pickling spice. Then soak the turkey the brine mixture and enough water to fill a 5 gallon bucket

I am not adding gas assist to the trailer smoker but it is not a Lang. What we are going to do is take a burner from a turkey fryer. I will get pictures when I get it done
I have used a charcoal briquette or two in my electric smoker and it will create a smoke ring however if I do not have any in there it will not create one.
I have a graduation party that has asked me to smoked these beans for the party. The have 300 people coming and asked that I plan for 150 people eating. Does anyone have a guess for how many times I should multiply the recipe by?
They will also have one other side and be serving sub sandwiches.
