Dan the best thing that you could do is go down the street to Kent Butcher Supply right off of Spartan Ind Drive and get their snack stick mix. It is the best out there and to die for.
For cheap 5 gallon containers go to your local grocery store that makes cakes. They get frosting in those containers and often just throw them out. I stop by my store and get around 5 at a time. Today everything goes into those containers, -charcoal, wood chips, tools, etc.
Love the idea, it would be cool but you would have to go through a fair amount of trouble to get it functional. I would love to see it if you decide to do it. This is one of those times where it might be better to buy than to remodel.
I saw this unit at the local butcher supply store. VERY nice unit. The bags are less expensive. From the demo at the store it does and will do a much better job than the Food Saver, and I am a huge Food Saver fan. The only down side that I saw (and the reason that I do not own one) is the price...
This is the heating element that I use. I had a dual element unit from Wally world before this. This unit works much better, I do use a temp controller with it and can control it to plus or minus one degree. If you need help on a controller let me know I can dig up some models that I have found...
Just caught this thread. When I made mine I added a valve on the underside of the smoke chamber to drain the fat out. You may want to consider adding one to your rig.
Thanks I will check it out. Most things that I have checked out do not smoke Mahi however he brought some back from Mexico. One of the packages is already smoked. It just seems like it will dry out pretty quickly and take on flavors very easy.
