Most of the time i just eye ball it, when the ribs get a good bark on them i put them in foil for 1.5 to 2 hours depending on what heat you like to cook at. I usually check them with a toothpick to check for tenderness. We like sweet ribs here, so right before I foil them I sprinkle brown sugar...
We only had about 10" here, but I have a cabin up in the mountains and they got about 4 feet up there, so I won't be doing any trout fishing up there for a while

Well the day after my first smoke on my new WSM I went to clean it, guess what I forgot to do. I was so excited to use for the first time I forgot to foil the water pan like everybody says to do. So I'll be scrubbing that nasty greasy thing for a while. I guess we learn from our mistakes
