Pork Butt - Rain will not stop a true smoker, its game day!!!

I applaud your setup. It is game day and the job has to get done. You might want to get a coolie on that barley pop though. Mark

New Smoker Question about propane or electric one?

I'm still on the fence about the smoke ring. It is visual but do you actually get a flavor from it? Some say yes some say no. I switched to a MES and missed some flavor from the charcoal. I now crumble a bit of charcoal in with the wood chips and the flavor is great...no smoke ring though. For...

    BBQ sauce sweetener

I thought the sauce was rather tasty. I'm going to try it on my next batch of sauce. It's always nice to find a new spin on the BBQ. Hungryjohn, I do like sauces with no sweetener, it just depends on my mood that day. Mark

    BBQ sauce sweetener

Went to a new neighbors house for a Barbie. They were doing Baby Backs on their Webber. They sauced them before taking them off the grill and were quite tasty. I enjoy all the regional sauces...Memphis, KC, Carolina, Texas, etc. This was a little different. Couldn't put my finger on it so I had...

    Best Canadian Bacon yet!

I'm glad your meat turned out well. I would be concerned with leaving it out for so long at room temperature....unless you had some ice in the sink. Mark

    Another Newbie from Minnesota

Hey LPH, I did the same as you. I got the ECB (lost some sleep) then got the MES. I'm very happy with the MES. Good luck with it and hope your wife likes the results. Mark

    MES Smoker Questions

I bought a MES last month and used it 3 times. I probed all around it and the temps do vary quite a bit. I found the temp accurate where the MES probe is located. I'm not discouraged...I now know what I have. The only way to get close to a uniform temp in the "box" is with a blower. High temp...

    Hello from Maryland

Hi everyone, I'm in Westminster, Md. Thanks for all the wonderful input on this forum. I have an ECB which does the job but keeps me up all night. Last month I bought a MES which lets me sleep...thank you Masterbuilt. I did miss the flavor of charcoal with the electric smoker. Through...

    Lawry's rub question.

I bought one at BJ's along with a 3 pack of BBRs 2 weeks ago. I prefer the Lawry's better than the Mcormicks. I will finish using this batch, but from now on, I'm going to make my own. Both have too much salt for my taste. Mark

    MES-vent and air/smoke control

The manual on my MES 30 does not address the vent...except to be aware of flare ups. I am also wondering at what point does smoke become "stale." For the time being, I'm using the vent as a temp. control. The manual also says to use soaked chips but the video on the website uses dry chips...
