I thought the sauce was rather tasty. I'm going to try it on my next batch of sauce. It's always nice to find a new spin on the BBQ. Hungryjohn, I do like sauces with no sweetener, it just depends on my mood that day.

I did the same as you. I got the ECB (lost some sleep) then got the MES. I'm very happy with the MES. Good luck with it and hope your wife likes the results.

I bought a MES last month and used it 3 times. I probed all around it and the temps do vary quite a bit. I found the temp accurate where the MES probe is located. I'm not discouraged...I now know what I have. The only way to get close to a uniform temp in the "box" is with a blower. High temp...

I bought one at BJ's along with a 3 pack of BBRs 2 weeks ago. I prefer the Lawry's better than the Mcormicks. I will finish using this batch, but from now on, I'm going to make my own. Both have too much salt for my taste.

The manual on my MES 30 does not address the vent...except to be aware of flare ups. I am also wondering at what point does smoke become "stale."
For the time being, I'm using the vent as a temp. control. The manual also says to use soaked chips but the video on the website uses dry chips...
1 T bacon oil
1 T sugar
1/2 t salt
1/4 t pepper
1/2 head shredded cabbage
Saute it up in a pan and you'll have some wonderful fried cabbage. Very tasty.
