So I did my first pastrami and it was GREAT! Looking at the spices at the store I found a McCormick pepper blend that had black, white and I think green pepper corns and allspice and coriander and the bottle had the hand grinder on the top. I think it was only about 3 bucks and worked fine. I...
the only thing better than smoked meatloaf is cold smoked meatloaf sandwiches! Really I think I like it cold the next day better than warm right out of the smoker.
Led Zepplin

Hey I just remembered I've got one of those little ball type pepper griders, the little cheap kind that you squeeze the 2 handles together, maybe I could use that for the pepper and coriander? It'd take a while but might work
Thanks so much for the info guys. Another one, can I go from the smoker to the steam in the same day? I want to try the steam, had read on here about putting it on a rack in a pan with water then covering with foil to steam, but not sure I'll be able to smoke it on friday and the steam on...
So I'm going to try pastrami this weekend for the first time. I've got a corned beef in freezer that I'm going to use. I've been reading on here and think I have a base plan but have just a few questions. I'm going to thaw it out and then soak/rinse in water so its not too salty. Should I...
wow that looks great. I love gumbo but have never made it from scratch, usually us the Zatarans stuff. I've never seen it with the hard boiled egg, but then again I know nothing about Cajun cooking, is that something you came up with on your own or is that the way it is supposed to be served?
So my brew buddy called me up today and tells me this Saturday is National Home Brew Day and asks if I want to brew beer. Well DUH!! Hell yes. So he is starting the day out at his house brewing a 10 gallon batch while I get some stuff going in the smoker at my house. After he is done with...
CUclimber, I'm not a huge fan of IPAs but it was good. It was a honey IPA and had a good sweetness at first and then a strong alcohol burn, it was around 8.5% abv. It was a clone of Stoudts double IPA, if you have ever had that, and it tasted very close. I think the Stoudts is around 10%...
I've got my 2nd batch of home brew in the fermenter, 10 gallons of an English Bitter!! Should be ready for kegging and bottling in 2 weeks. This is the 2nd time I've brewed with my friend and I'm loving this stuff! He does all grain brewing and I'm trying to learn but there is a lot more to it...
My friend had a glass one explode on him, lucky he did not get hurt, but he switched to plastic carboys. He is not sure what happend, thinks maybe the was a small crack in it already. I've only helped him once so I really cant speak from experience, but they can explode so if it were me I'd go...
oh sorry bout the stats, I was so excited I was able to post a picture I forgot, that was a big step for a technology challenged person like myself. I just heard about these things called Ipods, they are amazing you can listen to music without an 8 track, cassette tape or even a cd!! They are...
