OK, we're new to this, done a couple of things with the MES40 but tomorow we want to get serious. We want to smoke two pork butts, each about 7.5 lbs. Will start about 7 am, temp outside will be 25-28 degrees, but smoker will be protected by a shed. Pretty much we are following MEOWEY's... -

I've got a metal storage shed that I store the smoker, lawn mower, & misc junk all us guys have - any problem w/ using the smoker in the shed w/ the door open?- missed-em

A couple of questions
I have an MES40 but as a newby I hesitate to use it under some conditions: What happens to the electronics on the top if it rains? In cold/windy weather (normal s. Illiois winter) do I need to take special actions for these conditions? Will the MES handle 30-40 degree weather ok? Thanks for...- missed-em

My wife and I got an MES 40 for our anniversary (51) and so far have smoked 2 pork shoulders (1 great, 1 good - the one we invited company over for - go figure), one turkey that was really good, and a fatty (jalapeno, onion and cheese w/bacon weave) - looked great, tasted good, but too rich for...- missed-em
