The lowest my pellet grill goes is 180°f, but I do have a side smoker cabinet on it & I can maintain 150°-160°f in it.
Will this be a low enough temperature?

Yeah I've cooked on it twice. Smash burgers the 1st time. Then I done 1.5lbs of bacon.
Both turned out excellent!!! Only downside is the griddle weighs 40lbs.
My Thermoworks Smoke X4 I can walk 4-5city blocks away & it stays connected to the unit. I still had connectivity @6blocks till I walked in our city's limestone post office, I then lost signal.
On leaving the post office it took a block or so & it connected back up to the unit on my walk home...
I think your stack height & diameter is determined by the fire box opening into the smoke chamber. Also as the intake opening size for the Fire box.
Dont take my word for it, but there is some type of formula to use to get the best optimal flow.
I use apple when smoking my chocolate chip cookies. If you really wanna put some smoke flavor in them. Cold smoke your chocolate chips before hand. Really makes for a good cookie. The maple would be my vote.
Yeah I heard all the Meat Church rubs were good. I just need to order a bunch of different stuff.
They turned out pretty good. The Famous Dave's for me has too much of something for me. I think it's either onion or garlic is a bit heavy for me.

I gotta say. Spare rib burnt ends might be something I do more of.
For the 1st time making they turned out pretty good. I end up using Famous Dave's rib rub & KCMasterpiece BBQ sauce.

I just realized, i dont have any tinfoil pans to put the burnt ends in when the BBQ sauce is added.
What else can I use? Will my cake pans work? Or will it forever stain & flavor my cake pans?
