    Ok I finally got them on & smoking. 2 of the spare ribs had bones, so I left them whole. The other 4 spare ribs got turned into burnt ends. Or working at it. Here is a pic of them just starting out.

    Thanks to everybody that has replied & gave some many options to choose among. I am definitely going to try & make some burnt ends with a few of them. Do you guys usually rub the ribs down the night before? Thanks. This place is the best!😎😁

    Them should be "Fire" in about 6months if you can wait that long. The Bourbon, cherries & sugar should also make a fine cherry brandy Bourbon. Nice!

    I've been dying to try a offset smoker too. But the couple I looked at/want ain't cheap. I would say if you buy 1 just learn the nuances of using it.

    Looks super nice! Wish they would have released that a couple months ago before buying a Thermoworks smoke X4. Not near as expensive as I was thinking it would be.

    I would put a smoke daddy pellet hopper assembly on each side of it & then put a partition down the center from the top to the bottom. Then I would add a smoke stake on each side of the cabinet/freezer towards the very top. Then I would have a big heat shield/ drip tray at the bottom.
