    Boiling bacon before wrapping the ABT's

    ABTs are good wrapped in bacon or naked.  Mix chopped cooked bacon into your cream cheese mixture (I mix cream cheese, chopped green onion, and some rub) and fill your peppers.  I usually make half wrapped and half naked.  When wrapped you only need a portion of a slice of bacon.

    I make a lot of jerky and I believe the leaner the better; fat will go rancid.  For sausage you need fat but for jerky I go for as little fat as possible.  The last batch I made I used 93/7 ground beef;  it turned out very good.  I prefer sliced meat jerky but my wife likes the ground beef...

    Doing first cordon bleu, got some questions

    Another option for Cordon Bleau is to cut a pocket in the large side of the chicken breast rather then flatten it and roll it.  Roll the cheese into the ham slices and put the ham roll into the pocket and seal the opening with a toothpick.  Both ways are good.
