    Meat Combinations on the BBQ

I have done ribs and chicken. Cook the ribs for 3 hours and then wrap, then throw on the chicken which works out to be about 2 hours, then everyone is ready for a little gas grill action to firm up ribs and crisp chicken and sauce. I cook around 250F for those. You could do pork shoulders...

    Some weeknight snacks

I had them on the smoker for about 2 hours running between 225F-250F. Another 10-15 mins on the gas grill on low to crisp the skin and sauce them.

    Some weeknight snacks

So I have been jonesing for some sticky chicken and didn't feel like going through the whole monty for a full out cook. I bought some chicken wings and made some sticky chicken wings. This is the same as Dr. BBQ's competition chicken thighs, but with wings. Marinate in italian dressing over...

    Props For Good Service

2 things, it's a 3/8"-16tpi (threads per inch, national coarse) nylok nut available at a hardware store or big box home improvment store, and if you want mine you may have it. I made my own stack and don't have a need for it. Send me a PM if interested.

    good leg quarters

You can simply use a cookie sheet to make a baffle to direct the heat toward to other side of your offset. Also If you have a dollar tree near you (everything is a dollar) get some bread loaf pans for water pans and put them on the firebox side of the grate. These two things will help with...

I bought the (2) pack of 3" Dozyant temp gauges, they are supposed to be able to be calibrated. I couldn't get it loose and gave up. One was right on, the other 10 degrees colder. Tel-tru are really good, but pricey. They are around 35-40 bucks a piece for the 3" gauges.

    Oklahoma Joe smoker

It sounds like the reducer your talking about would be a 1/2" MNPT (male national pipe thread) by whatever size FNPT (female national pipe thread). These can be bought in a hardware store or any of the large box stores like Lowes and Home Depot. It's referred to as a hex pipe bushing.

    Competition style chicken practice

Looking good. When I make thighs and drumsticks on the smoker, I always use the gas grill to finish them. It crisps the skin and then I sauce them. I prefer the gas grill over the kettle for easy heat control.

    Recipe for brined dill pickles

Hi everyone. I make quick process pickles (Sweet, bread and butter, spicy dills), but have never made the fermented kind. I'm assuming that these are the kind of dill pickles that I prefer. I'm not a fan of garlic with pickles, just straight up deli style dills. Any help would be awesome.

Yes, after you re-paint your smoker and you to season it. Liberally coat all inside surfaces with cooking oil, many people including me just buy dollar store cooking spray since it is easy to use for this purpose. Run your smoker up to 250-300F for two hours and your all set. This process...

    Bulding a charcoal basket

Some A-36 HRS flatbar would be fine, although unless you work in or know someone in a fab shop, rolling it isn't for a home fabricator. You could possibly make the curved section with a bunch of mitered cuts and then just a flat peice to form the front. I personally would just shell out the 30...

Lowes, Home depot and even Walmart carry Rust-oleum brush on high temp paint whihc is good to 1,000 F. I bought some Rutland high-temp spray at Ace that is good to 1,200 F. A thought about your mounting brackets... You could always just through bolt them to the sides. I would just require...

Are you talking about a basket for a fire box or an actual firebox? Your post leaves a lot to try and understand as i re-read it 3 times.

    Oklahoma Joe smoker

Well they are different style smokers, The OK Joe is a reverse flow offset, where as the WSM is a vertical and they operate different mostly with how the heat is directed. I had a Vertical propane smoker the same one as in Jeff's book. I hated it. It seemed to dry stuff out reguardless of...

    Charcoal Grilling--Avoiding Char?

As to Stainless steel.. I'm a metal fabricator and at work they take hexavalent chromium pretty serious. It can lead to nervous system problems. Alzheimer's runs in my family. So who know what will be my demise? One thing I'm not worrying about is eating smoked or grilled foods.

    Charcoal Grilling--Avoiding Char?

Be far more concerned about your food and drinks coming in plastic packaging than some char on your food (which makes it taste good). Think about since the explosion of plastic being used over glass and waxed cardboard and the rise in cancer rates. Just some food for thought.

Smoking Advice - Char Griller Smokin Pro

I would suggest doing your overall spread in two separate cooks. You are talking about a lot of food, On my smokin pro 3 racks of ribs is about max for the main cooking grate, you can fit 2 on the upper rack, but with a large hunk of brisket and a pork should your really asking too much for the...

Advice needed on OK joe highland mods

Get Dr BBQ's big book of barbecue, look under the chicken section for his thigh recipe along with the sauce. It is a total winner, although I have made a rub that I feel is better than the one he has which has too much stuff in it, and I'm not a big cumin or thyme fan. If you would like my rub...
