    This is the first I've heard of any problems with them. As far as I know, as long as you get all the air out of the bag first, then a proper seal on a dry bag, you're good to go. The Health Deprtment types that were telling you to watch out would have been where I would start asking.

    Many people buy a complete cheap grill, like a Uniflame from Walmart for $40, and use the parts to make your UDS. You'll have your dome lid, one cooking grate, and the charcoal grate can be used for the base of your basket. If you want wheels on your UDS, you can use those, too.

    It looks great, and absolutely does qualify as a true fattie. You have your sausage rolled flat, you put stuff on it, you rolled your sausage back up, you wrapped it in bacon (optional, and prosciutto counts as bacon), and finally smoked to perfection.     Bacon for the fattie

    I like a cheap, thin sliced bacon, but not to the point where the slices fall apart when you try to separate them. Lightly smoked if at all, since the fattie it will be wrapped around will be smoked.

    Plastic stuffing tubes need to be well lubricated to get the casing to slide on. I use water, and a small diameter stuffing tube.

    These casings are cellulose, and impermeable to smoke. You would have to substitute liquid smoke for the real thing, then use the smoker just to cook them. Not realizing this myself, I bought a bunch of these pretty cheap. If you want to try them, PM me and I can sell you some for $1 each...
