Sounds to me like creosote from your fire is on your sausages. You could try peeling the casing off some of them. Chances are the fire may have sealed up the casing enough where the creosote didn't penetrate into the meat. If you're eating casing and all you will get the creosote taste, but...
Looking good, Princess!
I have the same grinder, and the same busboy trays from Sam's Club. I can grind right into the busboy tray by tipping the tray to slide one narrow side under the nut. Once past the nut the tray will lay flat on the table again, and the nut prevents the tray sliding...
Another quitter here-- of chewing tobacco, though. I've never smoked cigarettes so I can't vouch for which is harder, but I chewed for roughly 25 years. I "quit" several times over the years, once for 11 months, but would always go back to it despite the dental issues I was having. April 13...
These are two great entries, but I'm not surprised that there weren't many entries. It's one of those meats that are hard to get creative with, which makes these two entries that much more impressive.
I'm STILL looking for a drum for my UDS, so thanks for the great qview on your build. I'll add your ideas to the pile that's already spinning around in my head!
I see a potential problem with your basket design, though. You show legs under your ash pan (?), then your basket is raised above...
Could it be your homemade baffle causing your problems, instead of the AMNS? Sound like both were new for this smoke. Even the Weber grill itself sounds like it was new to you for this smoke. Looks like you recovered well, and salvaged a good meal.
I agree with what others have said. Wood...
Great food and a very funny story, Squirrel!
I had the same question as AK1 about your potatoes. If I read your description right, you start with one cookie sheet with your potato slice sammies, put a second cookie sheet on top of it, and a heavy pan on top of that before puttin them in the...
I'm jealous of you folks that are having trouble setting up your signatures. I can get right to the "Edit Signature" spot, then find that I have no imagination! Software glitches are easy compared to that!
I would skip the Pam spray in the bag, and just pop the rolled flat sheet and the cutting board under it into the freezer for 15 minutes or so, until it stiffens up a bit. Also try a bit more meat in the bag, to get a thicker sheet. The bacon weave will help too, and once you try it you'll...
Looks great, but without any eggs to bind it together did you have any crumbling issues when you sliced it?
I printed your recipe out, to try once hunting season starts this fall.
Looks like a great party, with great eats! You scavenged some pretty good qview from the relatives, too!
We need qview of that reverse flow smoker build you teasd us about, though.
One question, though--how do you all stay so skinny with food like that?
I agree that you should add mustard and foil to the "what you need" section.
Those first couple slide changes before that where you zoom way in on part of the slide and immediately change the slide to something else, that's just plain annoying "in-your-face" BS. When I see that, I will...
Pics are perfect. Looks like your original flat lid has a set of exhaust vent holes, currently covered with magnets or tape. Is that to keep rain out when you're NOT using the drum?
