    Will my ribs be OK???

no idea where you got the ribs but, yes it is possible that the butcher removed the outter membrane. If you are pulling off membrane and the bones are being exposed than the outter is already gone and you want to leave em alone. Hell rub em and smoke em, all mistake are still edible . Good...

    Not needing a Mod??

I see it like this, if money is no object then spend it on something you have researched and will do what you want to cook. IN GENERAL more money/less mods. I have several offsets that I like but $ is a concern sooooooooooo I spent 150 on the CG w/ SFB and 7500 hrs on SMF and 25-30 bucks on...

    Metal questions

I would still go with the chimney extension. If it is "sucking too much heat out" you can dampen the chimney down a little (I have never had to do this). But you want to get that heat down to your food, ya know.

    Simple brisket question.. i think

I dont even think I have seen a 2# brisket, must be the point or something. You should get the brisket you like, portioned to the amount of people you are going to feed and trim it yourself (leaving a fat cap) and go for it. As much as possible I would try not to cut it in half. I just saw a...

    Just finished CGSP mods!

Great work with the mods. Have you already extended the smoke stack down?? That makes are huge difference in heat. If you plan on grilling again all you have to do is lace a full sheet of HD foil through your main chamber ash plate and clean up will be easier also. Good lookin mods, now that...

    Metal questions

Just "tuned" the CG by using 18" wide 10 guage steel plates(2), they were 6or8 " wide. With minimal wind I keep 5-7* different side to side so it does work!! I used 18" measurement as it sits perfectly in the bottom of the chamber just covering the opening from the SFB. I believe I got that...
