    Smoker thermometer, using probe type?

Mdboatbum and oldschoolbbq, THANK YOU! Great tip on the potato.  Simple and smart!   I have an ECB which I modified (see http://www.smokingmeatforums.com/t/112549/howdy-from-el-salvador#post_708140) so the vents on the lid would probably serve just fine for threading the probe through.  Can't...

    Smoker thermometer, using probe type?

Hey all, as a relative newcomer to smoking, I've been watching lots of youtube vids for instructionals on how to smoke food. One thing I've been noticing is that some rigs don't actually have a built-in termometer but instead have a probe sticking out and they refer to its screen to see how hot...

    Howdy from El Salvador

Thanks jrod! I actually really enjoyed making the mods. So for the additional mod you're suggesting, do you mean something like #7 in this guide? http://www.randyq.addr.com/ecb/ecbmods.html   That also may be part of the reason why I overcooked the salmon the only time i used it (couldn't get...

Wood chips/chunks, soak or no soak, pouch or directly on the fire?

JC, I've been reading lots of good things about the amazen.  I guess my question is, do you have to use their sawdust or can you use your own?  Cause living in El Salvador it's very expensive and cumbersome to have things shipped and clearing customs.  But if I can get my own sawdust, it'd...

Wood chips/chunks, soak or no soak, pouch or directly on the fire?

Ok.... I think I'm starting to understand that in order to get smoke, you don't actually want your wood pieces to be on fire.  You just want them at a point where they are smoking but not burning, and therefore not creating all the additional heat that's so hard to control.  Is that right?  ...

    What is ABT

So, is there a way to cut down some of the hotness of the pepper?  I mean, I like jalapeños but worry that it would be too hot for me if I ate a large piece of one.  Some options?

    Solution to my temperature problem

Cal, very interesting idea! Thanks for sharing!  I wonder, as it burns, does the log just smolder and smoke or does it actually get hot enough to catch fire?  Would I be replicating the same idea if I had one of those heavy metal boxes with wood chips/chunks inside?

    Howdy from El Salvador

Thanks John! While this would be a great idea within the same country, shipping costs and import taxes make it quite expensive.  Not to mention, any food/fuel/chemical products being imported have to get health dept import licenses! What a nightmare... What I usually do is whenever I make it up...

Thanks, Cal!  At one of the hardware stores over here, they sell a metal box which I could pick up and try putting the wood chunks/chips in there.  I haven't heard too much about it but will pick one up now that you mention it.  Great tip!

Wood chips/chunks, soak or no soak, pouch or directly on the fire?

Thanks a lot, erain, some good ideas.  I'm not sure if on the ECB there's a place I can put the chunks near the charcoal but not touching it.  I may have to play with the little grate I modded for the charcoal pan, maybe figure out a way to keep the wood separate from the burning charcoal.  I'm...

Tried to add some pics but got a message about waiting to be moderated b/c I'm new.  Can post text, though.  Hopefully it'll be up soon so I can show you my ECB with its mods!

    What is ABT

OMG I had never even heard of these, but am about to run to the store to get some ingredients and fire up the ECB!!!!

Wood chips/chunks, soak or no soak, pouch or directly on the fire?

Thanks, SmokinAl, so if I use the fist sized ones, where would I place them?  Right on top of the coals, in the middle of the pan? Also, if I can find someone to sell me the wood locally, are there any specifications I should look for?  Are chunks/chips treated in any way, or just pure, raw...

OK, here are some pics.  First up, how it looks assembled.  Note the vent on the lid, legs on outside, charcoal tray legs poking out. Closer look at the legs and vent Since my old POS grill rusted away after 1 yr of use, I took the vent from it and installed it on the ECB. Didn't have a...
