    First Time ABT's, Qview

Nice! Just made my first ABTs today, too.  Good job!  I also ran into the same problem of too much bacon b/c the peppers were quite small.  The ones where I only used a half slice turned out much more balanced, the jalapeno and cheese weren't overwhelmed.

First ever ABTs, first ever pork cheek, plus ribs (qview)

Wow, can't believe I'd never even heard of ABTs before, but as soon as I saw them on these forums, I had to try them! What to do with a wednesday holiday?  Fire up the ECB!  Just got it a couple of weeks back and the first attempt at using it was not successful.  This time I had all day to...

    What is ABT

And yes, by coring them and removing all seeds most of them were very mild. I did get surprised by a couple that were randomly fiery. But overall i would say next time i need to supplement with extra heat.

    Howdy from El Salvador

Dave, you are very kind and generous. Thanks so much for your offer! Besides the cost of shipping, upon its arrival in el salvador, customs opens the box and assesses whichever value they want to it and from there, charges us a sales tax plus import tariffs. Even on used stuff!!! So we just...

    Solution to my temperature problem

Haven't gotten the box yet but smoked some ribs, abts and butts and used mesquite chunks which i placed on the very edges of the charcoal pan. This allowed the chunks to smolder and burn slowly, i dont think they ever actually caught full fire and therefore had steadier temps overall. Smoke kept...

    Howdy from El Salvador

Haha! Love it!  I'll try anything once, but most of the very exotic stuff like pig ears, coagulated blood, bull balls and stuff like that, I don't come back to. A pupusa is a thick corn tortilla stuffed with cheese which is cooked on a griddle.  Many variations exist where they will also be...

    Howdy from El Salvador

Thanks Moikel! Local foods here are pupusas, refried beans, thick corn tortillas, yucas.  All should be exciting foods to smoke, and i promise some qview soon.  For now, been trying to re-create my favorites from the years I lived in TX, brisket, ribs, pulled pork.  Only ones I've had any kind...

    Smoker thermometer, using probe type?

Teez, great pic, thanks! Can't wait to try smoking cheese.  It's done at a lower temperature, right?  Cold smoking?  Also heard of someone smoking salt, definitely interested in trying that!
