    It's pretty much, wherever there are Salvadorans, there will be pupuserias.  Cali is full of Salvadoreans and therefore, you will find some decent pupuserias.  Sarita's Pupuseria, Los Angeles, CA is supposed to be very good, it was featured in Food Network's "The Best Thing I Ever Ate"

    I "hot smoked" some pretty firm cheese yesterday that doesn't really melt much.  It held up reasonably well in the smoker, and was delicious.  Also did a little salt.  I had read about it somewhere and without having any idea how to do it, I just put a couple tablespoons' worth on some aluminum...

    So, with the mods, and a little minion method, ran the smoker for about 7h with one load of 1.5 bags of lump charcoal.  Only stirred up the lumps and added new wood chunks, but temp was MUCH more manageable...I think I'm going to try a brisket again, maybe this time it won't be like chewing...

    Since the remote probe was reading inaccurate, i switched up to a digital meat thermometer poking through one of the holes on the vent...worked like a charm!

    Haha...just made some up today for the first time.  We are going to just call them ABTs b/c the wife and other guests didn't find the idea of eating "turds" all that appetizing!  Although I crack up a little every time i think of the name....!
