Got an hour until foil and I can't wait. It is a beautiful day in southern bama and I have been sitting in the shade of a tree in my backyard with a yuengling and my dog. Doesn't get much better than this does it?

I follow 3-2-1 religiously. I only open the lid three times including when they are done. He is right that they are done when they're done... but 3-2-1 hasn't failed me yet.

I was a bit shy on the charcoal at first too. Now I just put a whole 8 lb bag of kingsford in with the vents wide open from the getgo and leave it alone. I am smoking right now and my temps have been a consistent 220 the whole time.

I have a WSM 18.5 and it has been great maintaining temps (at least over a 6 hour period). I have yet to try out a shoulder yet, so I don't have data on longer smokes.
Sorry about the delay. Those ribs ended up being great and we ate until we were about ready to pop. You know nap time always follows a good meal. See the OP for my finished product though!
