The learning curve actually isn't all that high when you have a community such as this to walk you through the process. Take a look at Jeff's 5 day course and ask any questions it doesn't answer. You will be smokin' with the best of 'em in no time!

Also, I made some tweaks to the finishing sauce from last time. Reduced the vinegar by a quarter of a cup and added another teaspoon of hot sauce.
My brother-in-law is here to visit from Korea and has never had smoked ribs, so I am going to blow his mind today. It has been storming off and on all day, but since there is a break in the weather I am going for it. My wife liked the Memphis in May recipe I used last time, so I am going to try...
Thanks eric. Yeah I'm using my wsm. I should miss the noon storm so ill have smoke in them by the time the 3 o'clock one rolls around. If I end up throwing them in the oven do I stay with 2-2-1 method or do I need to change it up?

I was gonna smoke some pork ribs today but alabama won't stop raining on me. Supposed to storm around noon then again at 3. I have no tent or umbrella... what do you guys think? Just go for it? If it rains hard how bad is it gonna get messed up?
