Just seen this. I just put the butt in a pan . (Easy clean up in the smoker) and catches all the juice. I never have added anything to the pan. Just defat the juice before adding it back to the pulled pork.

Got to love how good the UDS smoker holds the temp. Made two small adjustments in the first half hour after putting the butts on this morning . Now 6 hours later still holding the temp.

as far as the bungs exhaust. If i'm using the flat lid I just have both holes open. What is the "shelf hanger strips" ?
I have mine set up so I can put 4 racks in if i need them.
