That looks fantastic. I have a half loin in the fridge that will get prep'd tonight for the very same thing. My mouth is watering just thinking about it.
I think I would be very interested in a comp or at least a fun weekend. I know the Pacific NW BBQ Association has some events but they haven't posted the new schedule. Here is the site. http://pnwba.com/
I lived in Redmond for a few years but didnt start to really smoking until I moved back...
oh...the STALL! It will kill the best laid plans....
I always figure 12-16 hours for a whole packer and at least 8-10 for just the flat. Once in a while I get really lucky and dinner is early but not often.
It looks fantastic. Good Job.
Keep it up you are doing fine.
A few questions...What was the temp you cooked the lamb at? and how did you prep that baby before stuffing it in the smoker?
Our local Costco just started carrying whole lamb for $3.15/#. My head about exploded when I saw it. I think Thanksgiving may be a whole Lamb kinda meal if I can get...
So I have no comment on how you cooked the food...but a note on serving it. When you cut a tri-tip you notice it is shape similar to a boomerang.
If you will cut the corner parallel to the line made between the other tips you will find the meat seems more tender. It can be difficult to find a...

It will come soon enough. It looks great well done. You are ready for some beef now. A nice sirloin roast is a great...
Well said my friend. I have been away from the family here for a while and what a great welcome home to the forum you have given me. My pit has kept me so busy that I forget to stop and enjoy this place. Thanks
Thanks JRod! I had a young lady in the line bragging about Salvador Molly's fritters...she didnt come back up but she was visibly flushing and sweating great big drops on her forehead. She wasn't quite as cocky after dinner. It made me giggle a little inside.
Thanks Dave, He knew that it would be hot. He just didn't know how hot. The maple syrup quelled the heat pretty well. He say he might try another one.
7# of jerky sounds fantastic....my address is ....
I had a guy at the wedding popped on in his mouth in the line and about three feet down...
So, my brave (meaning...stupid) son who will always be the taste tester just 'popped' one in his mouth. I am trying not to sound heartless but he has tried to quench the fires of hell with 1)milk 2)sugar water and now 3) Maple Syrup. It is kinda funny. I will stick to the ABT's. I am sure they...
So I havent been around in a while. Life gets in the way of fun sometimes. We are going to a potluck wedding today and my contribution is the trifecta of pepper perfection.
We have my good for everyone "Not-so-Hots" Baby Bells stuffed with whipped cream chesse and peach mango salsa, bacon...
