    4 days marginal , think I would just stack them in a non reactive pan bone to skin and open or covered with a lid (open would be best).

    Ah looks good, but not sure about wire holding them down, looks like galvanized which will leach into brine, because of acid in brine..might taint the batch...maybe someone else will pooh, pooh me....hope i am wrong or you can chabge it with something else soon.

    Well the only thing I might do different if I was going this route would be to cube it first then smoke and then hot out of the smoker throw it into chili pot. Think it would save time in long run.

    Welcome. Hey learning is all part of process. Even smoker size will become learning as you see what and how much you smoke....sometimes the smaller is good. You will learn how to get around this.
