    Maverick 733

Yes, correct.  I run the probe wire through the vent hole.

    Maverick 733

I hear you on this... the last time I smoked a butt I had guests over though so the audio alerts on the 733 when thresholds were exceeded was helpful and kept me from obsessively looking at the receiver and being rude.  But it's definitely too complex to program the 733, I think, and coming from...

    Maverick 733

Yeah, I've done about a dozen smokes on the MES 30 2nd gen and had no problems at all with it.  I realize it has a bad rep around these parts but so far I haven't had any issues. I hear you on the programming.  I got pretty frustrated trying to figure it out till I grabbed the manual and...

    Maverick 733

My mother in law got me a 733 for Christmas and I used it to smoke a pork butt a day or two later.  The 733 worked great and I pulled the butt at 208 IT and it was absolutely perfect... best one I've ever done.  So after one use I'm really happy with the 733...hopefully this is the start of a...

First swing at smoking a butt

Nice work chief.  Yeah, I find that when I use the cider finishing sauce (got the recipe here, it seems to be used almost universally) I don't want any BBQ sauce, and guests often don't either.

Questions from a first time smoker and owner of MES 30"

I keep my MES in the basement (my house is a walkout ranch) and when I want to use it I carry it outside and put it on the patio directly on the ground.

Any feedback on newer 2nd Generation MES's

I have had no issues at all with my 2nd gen MES (purchased this August) and have used it 6 or 7 times so far. Having said that, I have not actually measured the ambient temp in it so far and compared it to the digital readout temp, so I don't know how accurate the thermo is in it... and a lot...

Questions from a first time smoker and owner of MES 30"

I agree with the others... you cannot do an overnight smoke with this unit as-is out of the box unless you just want to slow roast your meat with minimal to no smoke flavor, unfortunately. I actually have the Masterbuilt cold smoker attachment for the MES 30" and have only used it once so far...

Hmmm... intriguing.  I definitely want to try making this black BBQ sauce.  Thanks for mentioning it.

    A Kentucky Conundrum

Kentucky barbecue?  In the Louisville area it seems pretty much just like KC to me, with the exception of a local chain with terrible Q (Mark's Feed Store) that for some reason has a mustard-based sauce. I have been to Owensboro and had mutton BBQ but that seemed like KC with a different meat...

where do u live and what do u cook on

Howdy.  I live in Spencer County and I cook on an MES 30" (2nd gen, with the controls on the front).  I also have an old Brinkmann charcoal smoker but I haven't used it in forever and when I do I just grill on it.
