    Best place/price on 30" MES

Sam's usually has the MES 40 for about $300. It has the window which allows you to peek without opening the door and the 40 has a lot more room to put whatever you are smoking.

Great looking fattie. We use steak-uum for philly cheese steak, but have never thought of it for a fattie. One more thing on my ever growing bucket list.

    First AMNPS run smoking cheese

Toad--yours looks great. Now we both have that two week wait.   Salt--Thanks for the heads up. It was cold enough that morning that without any additional heat (other than the AMNPS) most of the smoke was well below the 75-85 degree range. I remember reading that some folks fire the MES up to...

    First AMNPS run smoking cheese

The weather watchers were predicting a cool morning and I had a brand new AMNPS to try out so I went to the store and stocked up on cheese. Per Todd's instructions I pulled the chip loader out and opened the chip tray 1.5 inches. I found a package of three assorted size sink drain screens...

    February Throwdown Voting.

What a great variety of snacks. I keep coming back to this trying to decide on which one should win and then just cannot make the choice. The only way I know of to decide is to actually sample each one.

    New to smoking

Welcome to the board. This is such a cool place to learn and share everything smoking. BTW--you better get your camera out and brush up on your close-up photography skills. This group is brutal if you don't have photos of your latest smoke.

Need advice on cold smoking cheese

My AMNPS will be here Wednesday so I went to the store and bought 12 blocks of cheese including extra sharp cheddar, sharp cheddar, mozzarella, colbyjack, monterrey jack, hot pepper and swiss. I have done some reading on this board and now have some questions. These are all 8 ounce blocks...

    oklahoma joe's smoker?

I too have on of the old Oklahoma Joe's and it is very thick gauge metal. I loved to cook on it and if it were not for the burn ban last year I would still be cooking on it (I ended up buying a MES 40). I always built a huge fire and continued to add wood until I had a very large bed of coals...

    Sausage and cheese stuffed chicken

Grocery store had chicken breasts on sale and I remembered seeing something like this on the board. I butterflied the breasts and marinated them in Italian Dressing overnight (sorry--forgot about photographing). Next day I stuffed them with Johnsonville Hot Italian Sausage (that's what I had...
