    Gonna cook up a slab of spare ribs.

    And they're off!  Applied rub earlier, let them set about 30 minutes while I got the charcoal ready.  They're on now, smokes a rolling and I'll probably foil these at about 3:00. Smoking these with both cherry and apple so Charlie will think better of me.  And now we wait.

    First chicken

    Looking good.  I love chickens off the grill. Stress free cooks that are damned tasty and everyone likes it.  I like to fill the cavity with celery and butter and roast them on the grill in a disposable aluminum pan with chicken stock in it.
