    Wow, no one, huh? FYI, I used it last night in a salmon fillet. The fish came out done to perfection. So far, no complaints on the thermometer.

    I got mine as a gift from my boss. He and his wife bought one and liked it so much, they bought 50 of them and gave them to us! I love it. It is like the Ron Popeil Showtime rotisserie of smokers! Set it and forget it! (for the most part)

    Wood chips not smoking?

    One thing I have noticed in my MES 30 is that if I let the chips soak for more than an hour or so, they take longer to get smoke. I am going with what would seem to be logic, that the more water the chips absorb, the longer it will take them to get to the smoldering point where they start to smoke.

    I had a Lowe's gift card so I thought I'd get a wireless thermometer. All I had been using until now was a plain ol meat thermometer. The only one I could fine was a Master Forge brand, (sorry, don't have the model number handy). I used it last night on a test run with some burgers in the MES...

    Looks good! I have a bird in the brine gettin ready to smoke tomorrow! I used some white wine with some brown sugar and a little salt. Haven't decided to spatchcock it or leave it whole.

    That is pretty much how I figured on doing it, in  the husk with butter tucked inside! Yep, there goes the mouth watering again! Thanks! I hope my wife doesn't have plans for me this weekend, I'm going to be hanging out with my smoker! lol!
