So I finally got around to harvest time before they over ripened and had to make my first official batch of home made jerk using nothing but scotch bonnets and no substituting habaneros. Got about 40 peppers and have another 50 or 60 that are still getting ripe. Used 6 whole peppers NOT seeded...
LONG day for sure but honestly I can think of worse ways to blow 13 hours. Pulled pork sandwich leftovers all week! I am not waking up early tomorrow that's for sure.
Ahhhhhhh!!!! Scramble mode it was. Thing refused to get over 188! Oh well. Wrapped it and let it sit for an hour and I had zero complaints. Have to say it was delicious and other than the bone there was hardly any waste. As frustrating as these butts can be there's nothing better than a pulled...
Yeah I've heard that butts are indestructible but at this point it's about the principle! Low and slow and I think I've officially made it past the stall! Onward and upward!!
I use mustard and rub the night before. Wrap them in cling wrap and let em sit overnight. Makes your fridge smell good every time you open it too. I typically do the 2-2-1 method but they always seem good to go at 2-2-.5

We're almost twins today. Mines in the mini wsm had a 2.5 hour stall at 170 but up to 175 now. (3:30). Mines 8.5 lbs on the nose put it on at 5:30 am. Hope yours is coming along nicely!
