that sucks, im picking up a lem 15lb stuffer this weekend, was hoping to order the 3/8" tube. i will check into it and let you know if i find something that will work. i think it comes with a 1/2" whats the smallest casing you can use with that?

good question,there seems to be two different methods. the first one i did i built a fire in fire box [ 6' away from smokehouse] was able to maintain 70 to 90* in smokehouse. i tended this fire for 14 hrs. not only a pita but went thru a lot of wood. end result, very good for my first attempt...
after that episode ive decided to bite the bullet and get the lem 15lb. two stores up by our cabin have them in stock 289.99. more than i wanted to spend, but im pretty sure they make a 3/8" tube for these as im interested in making snack stix. good luck on your search.

last week went to a meat market for some hi-temp cheddar cheese for summer sausage, they told me they use 1lb cheese per 10lbs meat. i used 3/4lb cheese for 9lbs of summer and it was just right. wouldnt know about the kraut tho. hope this helps.

thats interesting, im curing my 2nd belly for bacon. the first one i did i smoked for around 14hrs at around 70* smoker temp. after 12 hrs i cut a chunk off and fried it up, and girlfriend said it wasnt very smoky, so naturally for the last 2 hrs i really poured the smoke to it. mistake, not bad...
ive had both, smoked, and pickled ,both are very good.for smoking, just your basic salt/ sugar brine. size of fish doesnt really matter. for pickled i think the smaller fish are better.

i think we ordered these at about the same time, heres the scoop...
they are on backorder, i called them and they told me a rough guess would be 2 weeks before they ship. kinda crappy as i ordered mine online sun am. and i thought for sure it said " in stock" [ although i was a little hungover]...
the 3/8" is where the casing slides on {for small snack stix} not the stuffer side. problem is ,the gander stuffer doesnt come with a 3/8". so we need to find a 3/8" tube that will fit this particular model [stuffer side].
