Which MES did you get, the 30 or 40. The 30 holds heat better. The digital Thermometer is about 30 deg off so you might want to check it with another one. If you are still having heat problems, add some charcoal in the wood pan. Gives a better smoke flavor anyway.

Several people have made great smokers of LP tanks. Just think it through and be extra careful when cutting. Remember the exhaust from a gas engine will displace O2.

Looks real good. Might want to punch two holes in the bacon pan and catch the drippings below in another pan. (keeps smoker clean and bacon not swimming) Just what I like to do. Don't punch to many holes as some grease in required.

I think Abelman hit it on the head. Fillet is the way to go instead of steaks. Leave the scales/skin on one side only.

You can make it yourself and it's loads of fun to do. Several people have posted here and you can Google it. It makes a lot of smoke, takes a log time and a lot of beer.

I would use split logs and keep the temp down to 250 and keep it on longer. Do you have a grate inside the burn drum? I like the legs and damper system.

Might want to try OKUM instead of fiberglass rope. You should find it at an old hardware store or some pipe supply co. Won't burn or require replacement
