    setting temp without setting time

    When I set the temp on my MES30 I simply set the desired temp and then push the minus (-) once on time to get the full 24hrs.  It's only a couple of button presses after setting your temp so it's not a big deal IMO.

    I've got mine on 4 cinder blocks but plan to change that this summer. I have no intention of paying nearly the same price that I paid for the smoker for a stand to put it on. I'm going to make something, just not sure what yet.

    As long as it's rated for that high then sure, I see zero problems with that and the fact that you've had worry-free use for 3 years backs that up.  I just cringe when someone says they hooked up a dimmer as some of them aren't rated for that high of wattage and they tend to be pretty finicky...

    I'm fairly crafty when it comes to building my own devices so I'm relatively confident I could build my own electric smoker and have a far better end-product with the same financial investment.  I may have to give this more consideration as well.

    Yep, pretty common for these units to be horribly inaccurate.  That's one of the big complaints.

    Two degrees isn't enough to be concerned about.  Throw them in your smoker, set it to 250 and see if that number increases though.  That's the only thing I would be concerned about is if that discrepancy increases at higher temperatures where you plan on using them.
