You'll love that WSM! 2 things I'd recommend: - Eyelets from either CajunInjector or BBQ Guru - Maverick ET-73 I'm trying to find a clay pot base to try that mod too so I don't have to clean up the waterpan everytime.

    HELP!

You're in the right place. Maverick is correct.  You need to be anywhere between 195-205° to pull. You're going to want to change your thinking just a bit and not go by time anymore.  You're going to want to go by temp.  The 1.5 hours per pound is a good estimate, but to do it right, you want...

    First spares with q view

Sweet lookin' spares! I've only recently started doing ribs but I've noticed that depending on the slab, I have to go by site and do the bend test rather than stick to the 3-2-1 or 2-2-1 for bbs. I've foiled and not foiled and had success each way.  It's about keeping a steady temp.  I do...

    Question about using cherry wood...

I've used cherry wood successfully in my LP smoker. The 120° is probably too low to cook let alone produce enough heat to burn the wood so it can produce smoke.  Wood starts to heat up at about 212°...at this point, it may start to smolder and produce smoke. I'm not sure about the taste that...

    Beautiful Butts - QView Heavy

Well some of you may have seen the Pitmasters episode when they were in Mesquite and Harry Soo was yelling, "We're all gonna die!!!" I apparently was slated to do a reenactment of that tonight. The weather got terrible around 3AM and the EZ-UP would have blown away if not for the fact that it...

    Beautiful Butts - QView Heavy

Yeah they are...no messing around with the wire when you open the lid.  The WSM rocks!  So easy to get started and maintain temps. This will be my first long smoke so we'll see how I did with the minion method. He's doing awesome!  The last 2 pics weren't that great because it was storming and...

    Apple smoked baby backs (Q-view)

Something I just started to figure out is the different types of peppers you use make the difference with the heat. The cayenne is the heat that hits you hard.  The CBP is usually a nice warm heat.  The chili powder shouldn't make that much of a difference. The easiest thing to do is to remove...

    MES and new dual thermometer

Sounds like the ET-73 may need to be calibrated. I just used mine tonight for the first time too and am not noticing that issue. I believe the ET-73 can be calibrated, but I don't have the destructions in front of me right now.

    Beautiful Butts - QView Heavy

The WSMs spiked a little bit due to the wind from the storm, but after some adjusting they are sitting back down to around 225-230°. Here they are at 142° in just under 3.5 hours: The bark is starting to form...at ~165° we should see a good bark if the temps hold steady. On a side note, I...

    Beautiful Butts - QView Heavy

Tomorrow we're having a family reunion for my dad's side of the family and I volunteered to smoke some meat and my wife's making baked beans. My boy was taking pics and is being a big helper tonight.  He even laid down for a nap so he could stay up for the all-nighter. So here we go: Using my...
